Chewy Snickerdoodle Keto Cookies

These snickerdoodles taste legit! Chewy on the inside and crispy on the outside. Yum! This made 12 normal-sized cookies for me. Please not that it uses oat fiber, NOT oat flour, as oat flour is most certainly not low carb. 

Ingredients:

1 stick salted butter, softened
1/4 cup golden Lakanto or brown Swerve
1 tsp vanilla
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cream of tartar
1/4 cup oat fiber
1 cup almond flour
1/4 cup coconut flour
1 egg
1 tsp monk fruit juice concentrate
1.5 tsp cinnamon, divided
1/4 cup granulated Swerve

Instructions:

1) Pre-heat oven to 350 degrees.

2) Stir softened butter until fluffy and then mix in brown sugar substitute and vanilla.

3) Add in the baking soda, baking powder, cream of tartar, oat fiber, almond flour, coconut flour, egg, monk fruit juice and 1 tsp of cinnamon. Stir well.

4) In a small dish, mix the remaining 1/2 tsp of cinnamon and 1/4 cup granulated Swerve.

5) Roll the dough into balls and flatten them into roughly cookie shape. (The cookies will spread out slightly, but not a whole lot).

6) Press flattened cookie dough discs into the cinnamon/Swerve mixture and place on cookie sheet.

7) Repeat until all cookies have been covered, and sprinkle remaining cinnamon/Swerve mixture on the cookies.

8) Bake for roughly 15 minutes or until done.

9) Enjoy!
