Cheeseburger Bites

Growing up, my mom had company over a lot. She always made these as appetizers and since they are a family favorite, I decided to recreate them today. They may not look like much, but trust me, they are absolutely delicious and are sure to be a crowd favorite! Also, because I'm sure someone is going to ask, there is no replacement for the Velveeta cheese loaf in this recipe - replacing it with another cheese will completely change the flavor and texture. This made a total of 70 bites.

Ingredients:

English Muffins
8 tbsp butter, melted
4 large eggs
3/4 cup almond flour
1/4 cup coconut flour
1 tsp baking powder

Topping
1 pound ground beef
1 pound Velveeta Original Loaf
1 tsp garlic powder
1 tsp oregano
1 tsp onion powder
1/2 tsp pepper
1/2 tsp salt

Instructions:

1) Pre-heat oven to 350 degrees.

2) Mix together all English muffin ingredients. Stir well.

3) Spread English muffin batter evenly into a rectangular pan covered in parchment paper.

4) Bake for 20 minutes.

5) Change oven to broil. Broil for 4 minutes or until golden brown, and then remove from oven.

6) Flip onto cookie sheet, and return to broil for 4 minutes or until the other side is also golden brown. Remove from oven.

7) Once cool, cut English muffin into squares (mine were roughly 1.25" x 1.25"). 

8) Cut each square in half to make 2 squares.

9) Place the inside of the square facing up on a cookie sheet covered in parchment paper.

10) Return cookie sheet to broil for about 4 minutes or until all squares are golden brown. Remove from oven.

11) Cook ground beef.

12) Add Velveeta loaf to cooked beef and allow to melt fully.

13) Stir in garlic powder, onion powder, oregano, salt and pepper.

14) Scoop topping mixture onto the English muffins. 

15) Return to broil for about 5 minutes or until the Cheeseburger Bites are nicely charred.

16) Enjoy!

    1. Hi Stacia! So sorry for the delay! So, it makes 70 little bits. I typically have a few of them (especially if I am eating them for a meal vs an appetizer), but I like to do nutrition facts per bite so it's easy to calculate based on how many you want to eat.
