Keto Auntie Anne's Copycat Pretzels

I'm home for Labor Day weekend and it's pretzel time! These are delicious - chewy on the inside but slightly crusty on the outside. I may make a cinnamon-sugar variety later too. Yum! 


2.5 cups shredded mozzarella
1 cup almond flour
2 tsp baking powder
2 tsp xanthan gum
1/2 tsp table salt
2 eggs
1 tbsp coarse salt
1 tbsp butter, melted


1) Melt shredded mozzarella in a large microwavable bowl. (Microwave in 30 second increments and stir to avoid burning).

2) Add in the almond flour, baking powder, xanthan gum and table salt. Stir well.

3) Add in the eggs and stir well.

4) Once dough is mixed well, microwave for 20 seconds.

5) Stir well.

6) Pre-heat oven to 350 degrees.

7) On wax paper or parchment paper, roll dough into long thin logs. The dough will be very sticky but still workable.

8) Fold into pretzel shape and place on cookie sheet covered in parchment.

9) Cover pretzels in melted butter, and sprinkle on the coarse salt.

10) Bake for about 25 minutes in the oven or until done. (Depending on the size of your pretzels, the cooking time may vary. If they are getting too dark, remove from oven and cover in foil to finish cooking).

11) Enjoy.
