It's just about back-to-school time and across all of my Facebook groups parents are looking for low carb snack ideas. I therefore whipped together some delicious low carb, gluten free, grain free granola bars that would make a perfect snack for kids and adults alike. Plus, they have 8g more protein and 12g fewer carbs than the standard Quaker Chewy Granola Bar!
Ingredients:
Bars
1/2 cup 100% natural peanut butter
1/3 cup powdered Swerve
1/2 tsp salt
2 tbsp pepitas
2 tbsp sunflower seeds
2 tbsp sliced almonds
2 tbsp golden flax seed meal
1/4 cup pecan halves
1 tsp cinnamon
1 tsp vanilla
1 tbsp water
1/4 cup Walden Farms Pancake Syrup
1/4 cup Promix Chocolate Whey Protein Puffs
Chocolate Drizzle (optional)
1/3 cup Lily's chocolate chips
1 tbsp coconut oil
1 tbsp powdered Swerve
1) Pre-heat oven to 300 degrees.
2) In a medium sized bowl, mix 1/2 cup peanut butter with 1/3 cup powdered Swerve until smooth.
3) Place salt, pepitas, sunflower seeds, sliced almonds, golden flax seed meal, pecan halves and cinnamon inside a Ninja.
4) Pulse until coarse mixture.
5) Add the mixture to the bowl with the peanut butter and Swerve. Add the vanilla, water and Walden Farm's Pancake Syrup and stir until smooth.
6) Add the Promix protein puffs and stir again.
7) Spray a 9 x 9 pan and pat granola bar mixture into the pan.
8) Bake for 30 minutes at 300 degrees. Allow pan to completely cool.
9) Carefully flip pan onto a cutting board.
10) (optional) Melt chocolate chips with coconut oil. Stir frequently to avoid burning chocolate chips. Once melted, add powdered Swerve. Using a spoon, drizzle over granola bars. Place in refrigerator until chocolate is completely cooled and solid.
11) Cut into 12 bars.
