Low Carb Parmesan Cheddar Basil Stars

It's the 4th of July weekend and I'm feeling festive! I have about 8 bazillion red, white and blue desserts, so it's time for something more savory. So, star shaped parmesan cheddar basil stars it is! They taste AWESOME right out of the oven, so make sure to serve them hot!


5 cups shredded mozzarella
5 oz cream cheese
4 large eggs
3 cups almond flour
2 tbsp baking powder
1/4 cup fresh chopped basil
1/4 cup grated parmesan cheese
1/4 cup shredded parmesan cheese
1/4 cup shredded cheddar cheese


1) Pre-heat oven to 400 degrees.

2) Put the mozzarella in a microwavable bowl and break up the cream cheese into chunks on top of the mozzarella.

3) Put in the microwave for 1 minute. Take out and stir. Return for 30 second intervals and stir until melted.

4) Once fully melted, quickly stir in eggs, almond flour and baking powder.

5) Once the dough is nicely formed, add in the basil, shredded parmesan, grated parmesan and cheddar cheese.

6) Place dough on top of wax paper. Place another piece of wax paper on top of dough. Roll out with a rolling pin.

7) Use a star shaped cookie cutter to cut stars out of the dough. Re-roll scrap dough to cut out more stars.

8) Place stars on cookie sheets covered in parchment paper and cook for about 12 minutes, or until fully cooked.
