Low Carb Chocolate Crepe Cake

I've been wanting to make a crepe cake for a while now, and what better day to do it than on my birthday? I got home sort of late and wanted dessert without having to wait for something to cook in the oven, so this was the perfect choice! It was delicious and actually pretty easy to make.

Ingredients:

Cake
8 oz cream cheese, softened
8 large eggs
1/2 cup unsweetened cocoa powder
1/2 cup almond flour
1/2 cup granulated Swerve
6 squeezes Whole Earth monk fruit juice concentrate
2 tsp vanilla
1/4 tsp salt

Whipped Cream Icing
1 pint heavy whipping cream
1/2 cup powdered Swerve

Instructions:

1) Using a Ninja, blend together softened cream cheese and eggs.

2) Once smooth, add in all other ingredients and pulse until smooth.

3) Spray two pans with coconut oil spray and cook crepes as you would cook pancakes, and continue making crepes until the batter is gone.

4) Using a standing mixer, beat heavy whipping cream until you have whipped cream, and then gently mix in the powdered swerve.

5) Assemble crepe cake by alternating layers of crepes and layers of whipped cream icing.

6) (optional) After all of the layers are stacked, use the remaining whipped cream icing to ice the top and sides of the cake.

  3. I am so anxious to try this recipe over the holidays. I was wondering what could I sub for the Monkfruit Juice concentrate?

    1. You can sub more Swerve or a sweetener of choice - I just love the monk fruit combo. Monk fruit is much sweeter than most substitutes so you'll likely need more of whatever you sub with. Hope you like it and happy holidays!
