Keto Chocolate White Chocolate Chip Nutty Cookies

I'm home for Labor Day weekend, and a couple weeks back I had my dad stock up on the new Let's Bake Believe white chocolate chips so they'd be ready for me when I got in town. And I think white chocolate and chocolate is such a great combo, so chocolate white chocolate chip cookies it was! Right before I was about to roll the cookie dough balls, my dad suggested I should add nuts, so I added chopped pecans and sliced almonds. To be honest you couldn't really taste the chopped pecans so I left them out of the recipe, but boy were the sliced almonds a great addition! I will for sure be making these a ton and including the sliced almonds every time! 



Ingredients:

8 tbsp softened salted butter
1/2 cup granulated Swerve
1/4 cup golden Lakanto
1 tsp vanilla
1 large egg
1 cup walnut flour (or make it yourself from ~1.5 cup raw walnuts)
1/4 cup almond flour
1/4 cup coconut flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
2 tbsp unsweetened cocoa powder
6 tbsp Let's Bake Believe White Chocolate Chips
1/3 cup sliced almonds

Instructions:

1) Pre-heat oven to 350 degrees.

2) Cream together softened butter and sweeteners.

3) Add in vanilla and egg. Stir well.

4) Add in the walnut flour, almond flour, coconut flour, salt, baking powder, baking soda and unsweetened cocoa powder. Stir well.

5) Mix in the white chocolate chips and sliced almonds evenly.

6) Roll cookie dough into small balls. If you like thinner, crispier cookies, flatten slightly. If you like a bit of chunkier cookies, don't flatten at all. (These cookies spread a ton on their own, so make sure to leave space between them on the cookie sheet!)

7) Bake for around 15-17 minutes.

8) Allow to fully cool before eating or moving cookies... they solidify A LOT as they cool.
