As you may know, Lily's recently launched some new products (more on that here). One of them is peanut butter cups! 😍I was so pumped to see these because keto peanut butter cups are one of the most annoying things to make in my opinion, and I'm not quite sure why. These ones taste way better anyway, so it's a total win-win. Anyway, the first thing I had to do with them was stuff them in a cookie, because, YUM. These cookies are unreal, and they're also enormous which makes them even better.
Note: unfortunately you might have to wait a bit to make these because their peanut butter cups aren't available in some stores until June/July. But trust me, these are well worth the wait ;)
Ingredients:
8 tbsp softened salted butter
1/2 cup granulated Swerve
1/4 cup brown Swerve
1 tsp monk fruit juice concentrate
1 tsp vanilla
1 large egg
1.5 cup raw walnuts (or 1 cup walnut flour)
1/4 cup almond flour
1/4 cup coconut flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
2/3 cup Lily's semi-sweet chocolate chips
12 Lily's dark chocolate peanut butter cups
Instructions:
1) Pre-heat oven to 350 degrees.
2) Cream together softened butter and sweeteners.
3) Add in vanilla and egg. Stir well.
4) Put the raw walnuts in a Ninja or NutriBullet and pulse until you have walnut flour (skip this step if you are using walnut flour to begin with).
5) Add in the walnut flour, almond flour, coconut flour, salt, baking powder and baking soda. Stir well.
6) Mix in the Lily's semi-sweet chocolate chips. Stir well.
7) Sandwich a peanut butter cup within cookie dough balls. Repeat until all of the peanut butter cups are in their cookie dough balls.
8) Place dough balls on well-greased or parchment covered cookie sheets. These cookies are huge and do spread quite a bit, so make sure you are leaving enough room.
9) Bake for around 13-15 minutes until golden.
10) Allow to fully cool before eating or moving cookies... they solidify a lot as they cool.
