Keto Strawberry Poppyseed Muffins

Strawberry poppyseed? Yep, you read that right. Not lemon poppyseed. :) I actually started experimenting with this recipe around Valentine's Day when I thought it could be a fun themed breakfast item. But when it didn't turn out red like for some reason I was picturing in my head, I scrapped that thought. Anyway, I think strawberry poppyseed is a really unique (in a good way) flavor combination. They are also only 1g net carb per muffin! 

Ingredients:

1 stick salted butter, softened
1/3 cup granulated Swerve
1/4 cup brown Swerve
1 tsp vanilla
10 medium strawberries (with stems cut off)
1 cup raw walnuts
1/3 cup Preferred Keto Vanilla Collagen
1/4 cup coconut flour
1/4 cup almond flour
2 tsp baking powder
1/2 tsp baking soda
2 tsp strawberry extract
1/4 tsp salt
6 large eggs
1 tbsp + 1 tsp poppyseeds

Instructions:

1) Pre-heat oven to 350 degrees.

2) Mix together softened butter, sweeteners and vanilla in a large bowl.

3) Put strawberries in a Magic Bullet/Ninja etc. and pulse until mushed (it's fine if there a few tiny chunks here and there). Add mashed strawberries to the bowl and stir well.

4) Now place the raw walnuts into a Magic Bullet/Nina etc. It's fine to use the same one (why create more dishes when it's going to the same place anyway?) Pulse to create walnut flour, and then add to the large bowl and stir well.

5) Add in the Preferred Keto Vanilla Collagen, coconut flour, almond flour, baking powder, baking soda, strawberry extract, salt and eggs. Stir well.

6) Add the poppyseeds last, and stir well.

7) Put parchment liners in 15 cupcake tin cavities. Fill with batter until ~3/4 full. (Note: you can make several smaller muffins if you prefer).

8) Bake for about 28 minutes and then remove from oven, cover with a sheet of foil to avoid muffins from getting too dark in color, and then return to oven for a final 10 minutes.

9) Let muffins cool, and enjoy!
