I've been experimenting with gummy bear recipes, and after trying a couple it was time to come up with one of my own! These are strawberry gummy bears, and a serving is technically 15 bears as reflected in the nutrition facts, but hey, who's to stop you from eating more!? It makes 225 bears total. You can play around with different extracts to make tons of cool flavors. They aren't quite as chewy as normal gummy bears because obviously they don't have the glucose syrup, but they still taste good and are cute.
8 envelopes Knox gelatin
1/2 cup powdered Swerve
3/4 cup water
1 tsp monk fruit juice concentrate
3 tsp strawberry extract
10 drops red food coloring (optional)
Instructions:
1) In a small saucepan, empty all gelatin envelopes and add powdered Swerve.
2) Add water, monk fruit, extract and flavoring. Stir well. (It will be very thick and gunky).
3) Over medium heat, melt the mixture and stir frequently.
4) Reduce heat to lowest setting when you're reading to start putting the mixture into the molds.
5) Use the eyedropper to collect the liquid and place in the gummy bear molds.
6) Fill molds, and repeat until all liquid has been added to the molds.
7) After each tray is full, place in freezer for 7-10 minutes to solidify, and then you can pop out the bears.
8) I recommend drying out the bears for a couple of hours by leaving them uncovered for a couple of hours in the refrigerator before eating.
