I was bringing in keto breakfast foods into my office, and I wanted small bites that could feed a crowd. I settled on everything bagel hole bites and they're perfectly chewy and bagel-like! They make perfect little bagel sandwiches if you place a slather of cream cheese in between them too!
Ingredients:
2.5 cups shredded mozzarella
2 oz cream cheese
1.5 cups almond flour
4 tsp baking powder
1 tsp xantham gum
2 large eggs
3 tbsp Trader Joe's everything but the bagel seasoning
Instructions:
1) Pre-heat the oven to 350 degrees.
2) Put the mozzarella in a large microwavable bowl and spread the cream cheese on top of it.
3) Microwave the cheese/cream cheese mix for about 1 minute and then stir.
4) Return to microwave until fully melted and stir well.
5) Mix in the almond flour, baking powder, xantham gum and eggs. Stir very well.
6) Microwave dough for 15 seconds once well mixed and continue to stir.
7) Put the everything but the bagel seasoning in a small bowl.
9) Roll top and sides of balls into the seasoning and place on a parchment-covered cookie sheet. Ensure you leave sufficient space between the balls because they do rise and spread slightly.
11) Enjoy!

ReplyDeleteHi Lynn! Unfortunately there isn't a great substitute here...xantham gum is what gives them their bagel chewiness. You can make and leave out, but it won't taste the same.
DeleteI made these with change of carbalose instead of almond flour, added 2 teaspoons of garlic powder. They cooked for 28 minutes. Oh my gosh, they tasted just like biscuits, texture and all. I was so shocked. You can bet I will keep making them.
