Chocolate Chip Banana Muffins

Ingredients:


1/2 cup chia seeds
1 cup unsweetened cashew milk
2 tsp banana extract
1 tsp vanilla
5 eggs
1/3 cup sour cream
1 cup almond flour
1/2 cup coconut flour
1/2 cup granulated Swerve
1/4 cup brown Swerve or golden Lakanto
1/2 cup heavy whipping cream
1 tbsp baking powder
1 tsp baking soda
1/4 tsp salt

Instructions:

1) Pre-heat oven to 350 degrees.

2) Put 1/2 cup chia seeds in a Ninja or blender and pulse until seeds are ground.

3) Mix ground chia with unsweetened cashew milk and banana extract. Stir well and let sit 5 minutes.

4) Add in all other ingredients.

5) Fill cupcake tins with batter, roughly 3/4 full.

6) Bake for around 30 minutes or until done.

7) Enjoy!
