I had my first cranberry ever the other day and really liked them. I couldn't find a recipe for straight low carb cranberry bread, so I decided to make my own. It turned out fantastic, so good thing it makes 4 mini loaves!
1 stick salted butter, softened
1/4 Lakanto Golden Monkfruit Sweetener
1/2 cup granular Swerve
1 tsp vanilla
1/4 tsp salt
1/4 cup vanilla flavored protein powder
4 large eggs
2 cups almond flour
2 tsp baking powder
1 tsp baking soda
1/4 cup heavy whipping cream
1/4 cup water
16 oz sugar free cranberries (I used this recipe since I couldn't find any unsweetened ones in store)
Instructions:
1) Pre-heat oven to 350 degrees.
2) Cream together softened butter and sweeteners.
3) Add in vanilla, salt, protein powder, eggs, almond flour, baking powder, baking soda, heavy whipping cream and water. Stir well.
4) Add in 1 cup of the cranberries. Stir.
5) Pour batter into loaf pans, or muffin tins. (It will make 4 mini loaf pans or 16 muffins.)
6) Cook about 35 minutes or until done for mini loaf pans and about 23 minutes or until done for muffins.
7) Enjoy!
