So tonight I needed to make freezer space to stock up on more Real Good pizzas, soooo...I had to do something about the frozen riced cauliflower I recently bought at Trader Joe's. These were delicious and would make a great side to so many entrees!
Note: If you don't have an air fryer, you can just cook them a bit longer in the oven, but they won't be nearly as crispy.

Ingredients:
12 oz riced cauliflower (ensure the cauliflower is dry -- pat with paper towels if necessary to eliminate all possible moisture)
1 large egg
1 egg yolk
2/3 cup grated parmesan
1 tsp oregano
1/2 tsp paprika
1 tsp salt
1/2 tsp pepper
Instructions:
1) Mix together all ingredients.
2) Pre-heat oven to 350 degrees.
3) Form mixture in tater tot shapes, and place on a parchment paper-lined cookie sheet. Place in fridge for 15 minutes to "firm up."
4) Cook at 350 degree for 15 minutes in the oven. (The reason I put them in the oven versus just going straight into the air fryer was to solidify the tots. I worried putting them directly into the air fryer might make them crumble back into cauliflower rice).
5) Allow tots to cool. At this point you can either air fry them by proceeding to step 6 or freeze them for future air fry use.
6) Spray the air fryer with olive oil spray.
7) Cook at 380 for 5 minutes in the air fryer.
8) Flip tots using metal tongs.
9) Cook at 380 for 3-5 more minutes in the air fryer until golden brown.
