Keto Sesame Chicken

I was looking to try something new with chicken, and I was pleasantly shocked how much I liked this Keto Sesame Chicken. It was easily the most flavorful, juicy chicken I've had in a long time! If you're sick of dry, flavorless chicken breasts, this recipe is a must-try! 

In terms of substitutions, you can use unflavored whey protein isolate if you don't have unflavored collagen. You can also leave the egg and powder out all together if you want, though it will be a different flavor and texture. If you don't have Mushroom Chicken Bone Broth, any broth will do - just make sure to reduce or eliminate the salt if yours already has a lot of sodium. Keep in mind that the sesame seed, green onion and soy sauce amounts are just recommendations - you can add or subtract to taste.

Ingredients:

Marinade
~1 pound chicken breast
1.5 cups of Mushroom Chicken Bone Broth
1 tbsp salt
1 tsp pepper
2 cloves of fresh garlic, chopped
2 tbsp green onions, sliced
1/3 cup gluten free soy sauce

Dips
2 large eggs
1 cup unflavored collagen powder
1 tsp salt
1 tsp pepper

Stove Time
Avocado oil (enough for layer on pan)
1/4 cup gluten free soy sauce
1/4 cup sesame seeds
2 tbsp chopped green onions

Instructions:

1) Cut about 1 pound chicken breast into small pieces.

2) In a medium-sized bowl, mix together 1.5 cups of Mushroom Chicken Bone Broth, 1 tbsp salt, 1 tsp pepper, 2 cloves of chopped fresh garlic, 2 tbsp chopped green onions, 1/3 cup gluten free soy sauce.

3) Add the chicken pieces to the bowl, ensuring all pieces are submerged. Allow to marinate for 30 minutes.

4) Meanwhile, get 2 shallow bowls which you'll be dipping the chicken pieces in. In one, mix together 2 eggs. In the other, mix together 1 cup unflavored collagen, 1 tsp salt and 1/2 tsp pepper.

5) Dip each piece of chicken into the raw egg and then into the collagen. 

6) Coat a large pan with a layer of avocado oil and turn it to a medium-high heat.

7) Once oil is hot, place each piece of chicken single file in the pan. Allow to sit still and cook on each side for roughly 3 minutes or until cooked.

8) Remove chicken from pan with the oil and transfer it to a frying pan. Add 1/4 cup soy sauce, 1/4 cup sesame seeds and 2 tbsp green onions. Heat for 2-3 minutes and serve hot.
