Keto "Oreos" (made with HighKey Chocolate Pancake Mix)

I just love the look (and taste) of sandwich cookies. And the best part of making them yourself is you're in complete control of how much stuffing they have. These "Oreos" are great on their own, as cupcake/cake decorations, chocolate covered, as an ice cream topping and more! Plus, they're SO easy to make, thanks to the HighKey Snacks Chocolate Pancake Mix as the base.

Ingredients:

Cookies

1 bag HighKey Snacks Chocolate Pancake Mix 
3 large eggs
1 stick salted butter, softened
1 tsp vanilla

Filling
4 tbsp salted butter, softened
1 tsp vanilla
1.5 cup powdered Swerve
3 tbsp water

Instructions:

1) Pre-heat oven to 350 degrees.

2) In a large bowl, mix together the entire bag of HighKey Snacks Chocolate Pancake Mix, eggs, softened butter and vanilla. Stir well.

3) Line a cookie sheet with parchment paper, and scoop spoonfuls of the dough onto the sheet.

4) Flatten each spoonful with the back of a spoon, or with your fingers sprayed in coconut oil. Try to make them as flat and even as possible - the circular shape doesn't matter as much since we'll be using a cookie cutter.

5) Bake for 11 minutes, or until done. Remove from oven.

6) After 5 minutes of cooling, use an Oreo-sized circle cookie cutter to make perfect circles out of your cookies. (You can save the scraps for something else if you want). 

7) Allow the cookies to cool fully.

8) Meanwhile, make the stuffing by mixing together the butter, vanilla, Swerve and water.

9) Once the cookies are fully cool, fill the cookies with the stuffing. (I used a spatula).

10) Enjoy!

*Note: The nutrition facts for each cookie depend on how thick your cookies are, how much stuffing you use, and the exact size of your cookie cutter. Mine made about 30 sandwich cookies. (The carbs appear much higher than you'd expect because the mix contains 50g allulose).
