Pumpkin Chocolate Chip Pancakes

Fall is approaching, and that means it's time for pumpkin recipes! I love the Birch Benders Keto Pancake Mix, so I've been wanting to make a pumpkin version using it as the base. It worked out really well! Since ingredients are added, it makes more pancakes than the normal package would, so I used only a cup of the mix versus a whole bag. I'd say this recipe could feed about two people. You can sub the unsweetened cashew milk for unsweetened almond/coconut milk or even water, but I personally love how cashew milk tastes in recipes.


Ingredients:

1 cup of Birch Benders Keto Pancake Mix
7.5 oz canned pumpkin 
1 cup unsweetened cashew milk 
1 tsp monk fruit juice concentrate
1 tsp pumpkin pie spice
Keto chocolate chips (to taste)

Instructions:

1) Spray a non-stick pan with coconut oil spray and heat the pan up on the stove.

2) Mix together the pancake mix, pumpkin, cashew milk, monk fruit and pumpkin pie spice. 

3) Once the pan is hot enough, scoop some batter into the pan (you may need to spread it out slightly). 

4) Sprinkle some chocolate chips on the pancake.

5) Flip when ready. Cook until the other side is done.

6) Repeat until all of the batter is used.

7) Enjoy!

Depends on the size of your pancakes and how many chocolate chips (and what brand) you use, so I recommend calculating your own if you want precise facts
