S'mores Cookies

It feels like summertime here in STL already, and with graham crackers and Lily's chocolate in my house, s'mores was on my mind. My dad was in the mood for cookies, so s'mores cookies it was. With melted marshmallow they look a bit different, but they taste awesome.

Ingredients:

1 stick salted butter, softened
1/3 cup Swerve, granular
1/3 cup Swerve, brown
1 tbsp vanilla
1 tsp monk fruit juice concentrate
1 egg
1/4 tsp salt
1 tsp baking soda
1/3 cup almond flour
1/2 cup lupin flour
1 bar Lily's milk chocolate
Keto carb graham crackers (I use my recipe)
Low carb marshmallows (I used this recipe)

Instructions:

1) Pre-heat oven to 350 degrees.

2) Mix together softened butter, sweeteners and vanilla.

3) Stir in the egg.

4) Mix in the salt, baking soda, almond flour and lupin flour. Stir well.

5) Gently stir in the chocolate, graham crackers and marshmallows.

6) Roll the dough into slightly flattened discs (they do spread some, but you do need to press them down a bit).

7) Place on parchment paper, leaving appropriate space between the cookies.

8) Bake for about 18 minutes.

9) Allow cookies to cool fully - they harden a lot as they cool.

10) Enjoy!
