Keto Brookies

Can't decide if you want to make cookies or brownies? Why not make brookies and get the best of both worlds? As written, the recipe makes 24 brookies. It may seem like a lot, but I am glad I have so many of these around since they're super delicious and freeze well (though it's also slightly dangerous 😂). 

Ingredients:


Brownie Layer
1/2 cup almond flour
1/2 cup coconut flour
3 tbsp Preferred Keto Chocolate Collagen
2 tbsp unsweetened cocoa powder
1 tsp baking powder
4 tbsp salted butter, melted
1 tsp vanilla
4 eggs
1/4 cup sour cream
1/2 cup water
2/3 cup Lily's chocolate chips



Cookie Layer
8 tbsp softened salted butter
1/2 cup Whole Earth Stevia & Monk Fruit
1/4 cup golden Lakanto
1 tsp monk fruit juice concentrate
1 tsp vanilla
1 large egg
1 cup walnut flour (or make it yourself from ~1.5 cup raw walnuts)
1/4 cup almond flour
1/4 cup coconut flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
2/3 cup Lily's chocolate chips


Instructions:


1) Pre-heat oven to 350 degrees.

2) In a large bowl, mix together all dry brownie ingredients (almond flour, coconut flour, chocolate collagen, unsweetened cocoa powder, baking powder, sweetener). Stir well.

3) Add in wet brownie ingredients (melted butter, vanilla, eggs, sour cream, water). Stir well.

4) Mix chocolate chips into the brownie batter and stir well.

5) Spray a 9" x 13" x 2" pan with coconut oil and spread batter evenly. 

6) Bake for 20 minutes and then remove from oven (you can work on the cookie layer while it bakes).

7) In a separate large bowl, start the cookie layer. Cream together softened butter and sweeteners.

8) Add in vanilla and egg. Stir well.

9) Add in the walnut flour, almond flour, coconut flour, salt, baking powder and baking soda. Stir well.

10) Mix in the chocolate chips evenly.

11) Spread the cookie layer evenly on top of the brownie layer that has already cooked for 20 minutes.

12) Cook for 20 minutes and then remove from oven.

13) Cover with foil to prevent cookie layer getting too dark and return to oven to cook for a final 10 minutes.

14) Remove from oven and allow to cool (or not if you want to eat it hot - it's great both but solidifies quite a bit as it cools).
