Belgian Waffles

It's fourth of July and I'm home at my parents' house! ๐Ÿ˜And a holiday definitely calls for waffles around this house! This recipe makes 7 very large Belgian waffles, but the quantity it'll make and nutrition facts of course depend on your waffle iron. These are awesome reheated in an air fryer if you have one! Pure crispy waffle deliciousness!

Ingredients:

1 cup almond flour
1/2 cup egg white protein powder
1/4 cup coconut flour
1/4 cup granulated Swerve
1/2 tsp salt
4 tsp baking powder
4 oz cream cheese, softened
2 tsp vanilla
1 cup unsweetened cashew milk
4 eggs, separated


Instructions:

1) Mix together all dry ingredients (almond flour, egg white protein powder, coconut flour, Swerve, salt and baking powder).

2) Place the egg whites from the eggs in a standing mixer and mix until stiff peaks form.

3) Add the wet ingredients to the bowl with the dry ingredients (cream cheese, vanilla, cashew milk and egg yolks). Stir well.

4) Gently mix in the stiff egg whites and stir until smooth consistency.

5) Spray a Belgian waffle maker well with coconut oil spray.

6) Cook until ready light comes on.

7) Serve with butter and syrup and enjoy!

  1. I would like to try these as it's been difficult to find a good recipe that makes crispy waffles. The only ingredient I'm missing is cashew milk...will any other milk work ok do you think?
