I just arrived at my parents' house today for Thanksgiving break, and you know what that means: baking time! These maple butter pecan cookies are the first thing I made. They are soft, chewy and absolutely delicious. They taste like Fall. YUM!
1 stick butter
1/2 cup granular Swerve
1 cup almond flour
1/3 cup coconut flour
1 tsp vanilla
1 large egg
1/3 cup Walden Farms Pancake Syrup
1/2 cup pecan bits
1/8 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
Instructions:
1) Pre-heat oven to 350 degrees.
2) Melt a stick of butter in a large microwavable bowl.
3) Once melted, add Swerve, almond flour, coconut flour, vanilla, egg, Walden Farms Pancake Syrup, pecan bits, salt, baking soda and baking powder. Mix well.
4) Roll dough into 1 inch balls and flatten to a cookie shape, as they don't flatten much in the oven.
5) Bake for around 17-18 minutes until browned and slightly firm to touch.
6) Let cool 5 minutes on cookie sheet and then move to a paper towel to let cool.
7) Enjoy!
