So, I'm back at my parents' house visiting again and you know what that means: Caroline's Keto Kitchen is back in session! It's been a while (way too long) since I've had time for new recipes lately, but I'm sure with Labor Day weekend I'll find some time. Anyway, my dad is STILL eating low carb and is doing absolutely fantastic, so I wanted to reward him with some ice cream. His favorite flavor is chocolate, so chocolate it is!
Ingredients:
4 tbsp butter
1 cup heavy whipping cream
1 cup unsweetened cashew milk
2/3 cup unsweetened cocoa powder
2/3 cup powdered Swerve
2 tbsp vanilla extract
2 squeezes Whole Earth monk fruit juice concentrate
2 egg yolks
Instructions:
1) Melt 4 tbsp butter in a large pan.
2) Add the heavy whipping cream and cashew milk.
3) Add the cocoa powder and Swerve. Stir until dissolved.
4) Add the vanilla and monk fruit.
5) Remove from heat and pour into a container.
6) Once cool, place container in fridge.
7) After at least 10-15 minutes, stir in egg yolks.
8) Place in ice cream maker.
9) Serve as soft serve, or freeze and serve as ice cream.
