Today is my dad's birthday! I made him a delicious chocolate cake, and I had to top it off with the perfect buttercream. It's super simple, and tastes delicious! I don't have nutrition facts here because I couldn't really quantify how much icing is in one serving, as it all depends on your cake pan size, slice size, etc. I will say that this makes a lot of icing. I'd guess maybe 3.5 cups worth. I iced a 2-layer 8-inch cake and even had 1 cup leftover. But I'm definitely not complaining about leftovers of this stuff around the house. ;)
Ingredients:
4 sticks butter, softened
~2.5 cups powdered Swerve
~1/2 cup heavy whipping cream
2 tsp vanilla
~6 squeeze Whole Earth monk fruit juice concentrate
Instructions:
1) Whip the softened butter until smooth.
2) Add vanilla.
3) Alternative adding the powdered Swerve and heavy whipping cream. Mix well before each addition. Note: The quantities here are estimates, but add each until you get a nice frosting consistency that is not too thick and not too thin.
4) Try it, and then add monk fruit juice concentrate until you accomplish your ideal sweetness.
