About Caroline


Hi, I'm Caroline Levens, and I'm the 26-year old low carb enthusiast behind Caroline's Keto Kitchen (and that's my dog, Tootsie). I started Caroline's Keto Kitchen in 2015 after I wanted a way to easily share my low carb recipes with the world. I absolutely love baking, decorating and recipe creation. I enjoy cooking too, but mainly because it is more time in the kitchen. The kitchen is truly my happy place.

I follow a ketogenic diet for medical reasons and will be keto for life (and gluten free following a more recent Celiac diagnosis). Many of my readers are here for recipes that are friendly for blood glucose management (I myself have T1D...you can read more about that here), PCOS, or, simply to lose weight.

I'm originally from St. Louis, MO, and I currently live in the Bay Area. I've worked at Google for the past 4.5 years, and I currently work on Strategy & Operations for Google for Startups and Grow with Google.

Q: What macros do you follow?

A: Given we likely have different goals and energy needs, it isn't too helpful for me to share my personal macros with you, but what I do highly recommend is this free macro calculator from Perfect Keto. I lose weight most easily with a rather high protein ratio, so if you're using this calculator for the first time and aren't sure where to start, I recommend choosing their Specialized Macro Calculator and inputting 30g carbs and a 1.6 protein ratio.

Q: How fast can you lose weight on keto?

A: The short answer is it depends on a lot of factors. This article from Perfect Keto details some of the major ones and how to set yourself up for success to lose weight on keto. It's definitely possible to gain weight on keto - too much fat and/or too many calories are very real things.

Q: There is so much information on keto online. What do you recommend referencing so I know I'm not getting misinformation?

A: I recommend the Keto Answers book by Anthony Gustin and Chris Irvin. It has 3 parts: Keto 101, Ketosis in Action and Ketosis & You. There's even an entire chapter dedicated to Keto for Women. It covers other "hot topics" like fasting, tracking, etc.
