Double Chocolate Peanut Fudgy Cookie Bites

Mmmm...35 cookie bites hot out of the oven. Fudgy, chocolatey, delicious and so quick and easy to make.


1 cup sugar free peanut butter
1/4 cup granulated Swerve
1/4 cup golden Lakanto or brown Swerve
1/2 cup almond flour
1/4 cup unsweetened cocoa powder 
1 tsp vanilla
2 eggs
1/4 cup KNOW Foods Chocolate Chips


1) Pre-heat oven to 350 degrees.

2) Cream together the peanut butter and the sweeteners.

3) Mix in the almond flour, cocoa powder, vanilla and eggs. Stir well.

4) Stir in the chocolate chips.

5) Roll into flattened disks and place on a cookie sheet covered in parchment paper (these cookies won't spread much at all, so they should be roughly in the desired shape when they go into the oven).

6) Bake for 8-10 minutes or until done.

7) Allow to cool for at least 5 minutes on cookie sheet.

8) Enjoy!
