Pumpkin Double Chocolate Swirl Bread

And pumpkin season continues! After making my pumpkin cheesecake recipe a few weeks ago, I was craving pumpkin bread. And this hit the spot, let me tell you. It's moist and flavorful, and the melty chocolate swirled between the pumpkin and chocolate pumpkin takes this bread to the next level. It was also the first time I used lupin flour - success!

Ingredients:

15 oz canned pumpkin
1/2 cup golden Lakanto or brown Swerve
2/3 cup powdered Swerve
2 tsp monk fruit juice concentrate
1/3 cup sour cream
2 tsp vanilla
1/2 tsp salt
1 tsp baking soda
1 tbsp baking powder
1/2 tsp cinnamon
2 tsp pumpkin pie spice
1/4 cup coconut flour
1/4 cup lupin flour
2/3 cup almond flour
6 eggs
3 tbsp unsweetened cocoa powder
1 bar Lily's creamy milk chocolate
1/4 cup avocado oil

Instructions:

1) Mix together the canned pumpkin, brown sugar substitute, powdered Swerve, monk fruit juice concentrate, sour cream, vanilla, salt, baking soda, baking powder, cinnamon and pumpkin pie spice. Stir well.

2) Add in the coconut flour, lupin flour and almond flour. Stir well (the batter will be pretty thick).

3) Mix in the eggs. Stir well.

4) Divide the batter into 2 bowls.

5) In one bowl, add the cocoa powder and stir well.

6) Break up the Lily's chocolate bar and put in a small microwavable bowl with the avocado oil.

7) Pre-heat oven to 375 degrees.

8) Melt the chocolate in the microwave. (Cook for small increments and stir frequently to avoid burning the chocolate).

9) Grease a loaf pan very well.

10) Cover the bottom with a layer of pumpkin batter.

11) Next drizzle half of the melted chocolate on top of the pumpkin batter.

12) Then add all of the chocolate pumpkin batter.

13) Cover with the remaining melted chocolate.

14) Add in the rest of the pumpkin batter.

15) Using a spoon, gently swirl the batter within the pan. Avoid over-swirling or you'll end up with one color.

16) Bake for about 55 minutes or until done.

17) Remove from oven and allow to cool fully.

18) Cut bread into 12 slices and each slice in half for a total of 24 pieces.
