Mint Chocolate Chip Cheesecake Brownies

My Preferred Keto Chocolate Collagen arrived today and I was eager to give it a try, so I decided to make mint chocolate chip cheesecake brownies. They are delicious, and the collagen gives them the extra chewiness that you'd expect in a brownie. YUM.

Ingredients:

Brownie 
4 tbsp salted butter
1/2 cup almond flour
1/2 cup coconut flour
1 tsp vanilla
4 eggs
2 tbsp unsweetened cocoa powder
1/4 cup sour cream
1 tsp baking powder
3/4 cup granulated Swerve 
1/2 cup water

Cheesecake
8 oz cream cheese, softened
1 tsp vanilla 
1 egg yolk
1.5 tsp mint extract
2/3 cup powdered Swerve
4 drops green food coloring

Topping

Instructions:

1) In a large bowl, mix together all brownie ingredients (melted butter, almond flour, coconut flour, vanilla, eggs, chocolate collagen, cocoa powder, sour cream, baking powder, Swerve, water), and then stir in the chocolate chips last. 

2) Preheat oven to 350 degrees.

3) In a separate bowl, beat the softened cream cheese until smooth. (Heat it up if necessary).

4) Add the vanilla, egg yolk, mint extract, powdered Swerve and food coloring to the cream cheese. Stir well.

5) Spray a non-stick 9x13 pan with coconut oil.

6) Pour brownie base in the pan and spread evenly.

7) Heat the cheesecake mixture up for 15 seconds to make it easier to spread.

8) Using a spoon, add spots of cheesecake mixture onto the brownie mixture. 

9) With a knife, make swirls in the batter until you like the appearance.

10) Top with the remaining chocolate chips.

11) Bake for 45 minutes or until done.

12) Allow to cool, and enjoy!

  1. How can I modify the cheesecake? my boy doesn't like the mint flavor. What alternative do you suggest?

    1. Hi Michela! You can simply leave out the mint flavor and it will be normal cheesecake flavor. :)
