Cinnamon Sugar Bites

In my opinion, there are few better combinations than cinnamon and sugar. And the smell of cinnamon sugary things baking...enough said! My dad thought they tasted like donuts and my sister thought they tasted like pretzels, so I'm going with cinnamon sugar bites.

Ingredients:

2.5 cups shredded mozzarella
1 cup almond flour
2 tsp baking powder
2 tsp xanthan gum
2 eggs
2 tbsp butter, melted
1/2 cup granulated Swerve
1 tsp cinnamon

(optional) 2 tbsp Swerve

Instructions:

1) Melt shredded mozzarella in a large microwavable bowl. (Microwave in 30 second increments and stir to avoid burning).

2) Add in the almond flour, baking powder and xanthan gum. Stir well.

3) Add in the eggs and stir well.

4) Once dough is mixed well, microwave for 20 seconds.

5) Stir well.

6) Pre-heat oven to 350 degrees. 

7) In a small dish, mix together the Swerve and cinnamon.

8) Roll the dough into small, bite-sized balls (mine made 35).

9) Roll the balls into the melted butter, and then fully cover in the Swerve/cinnamon mix until well-coated. Repeat until all balls have been covered, and place on cookie sheet covered in parchment paper.

10) Bake for about 22 minutes in the oven or until done.

11) (optional) When they're hot out of the oven, sprinkle the extra 2 tbsp Swerve on top of the bites.
