Peanut Butter Chocolate Chip Muffins

I have a lot of peanut butter and 10 pounds of chocolate chips right now, so it's time for another peanut butter chocolate recipe! I decided to make muffins this time around (cookies last time), and YUM! They were especially good hot.

Ingredients:

2/3 cup peanut butter (sugar free and unsalted)
1/3 cup sour cream (full fat)
1/4 cup brown Swerve or golden Lakanto
1/2 cup granulated Swerve
4 eggs, room temperature
1 tsp vanilla
1/4 tsp salt
1/4 cup coconut flour
1/4 cup egg white protein powder
1 tbsp baking powder
1 tsp monk fruit juice concentrate
1/2 cup KNOW Foods Chocolate Chips


Instructions:

1) Pre-heat oven to 350 degrees.

2) Mix together all ingredients except for the chocolate chips. Stir well.

3) Mix in the chocolate chips.

4) Fill cupcake tin liners about 2/3 to 3/4 full.

5) Bake for 25 minutes or until done.

6) Enjoy!
