Snickerdoodle Frosting

So yesterday I experimented making Snickerdoodle Cupcakes. They were really good yesterday, but I tried one again today, and somehow the texture changed a ton overnight. Needless to say, the cupcake part needs some work (and some more cinnamon!). For now I thought I'd post the Snickerdoodle Frosting recipe given I'm very happy with it. Perhaps add it to your favorite low carb vanilla cupcake recipe! I'll update this post once I figure out the cupcake part. This recipe makes enough icing to frost 12 normal-sized cupcakes.

Ingredients:

1 stick butter, softened
3/4 cup powdered Swerve
1/2 tsp vanilla
1/2 tsp cinnamon
2 squeeze Whole Earth monk fruit juice concentrate 

Instructions:

1) Mix all ingredients together.

2) Frost cupcakes, and enjoy!
