Keto Candy

What's better than nuts? Chocolate covered nuts, of course. My dad LOVES candy, so I made these just for him.

Ingredients:

1/4 cup sliced almonds
1/2 cup whole almonds
1/2 cup walnuts
1/4 cup pecan bits
1/4 cup pecan halves
1 stick butter
4 oz cream cheese
3/4 cup granular Swerve
1 tsp caramel extract
1 tsp vanilla
2 tbsp heavy whipping cream
2 milk chocolate Lily's bars
2 tbsp coconut oil
2 tbsp heavy whipping cream

Instructions:

1) In a bowl, mix all nuts together.

2) In a large pan over medium-high heat, melt together the butter and cream cheese. (The butter will brown some).

3) Once smooth, add the Swerve, the vanilla and the heavy whipping cream. Stir well.

4) Add in the nut mix and stir well.

5) Line a full-size cupcake pan with liners. (Alternatively you can do a mini-cupcake pan for smaller candies).

6) Scoop the nut mix into the liners and allow to cool, and then place the trays the refrigerator.

7) Once the mix inside the liners is entirely solid, pop them out.

8) Over medium heat, melt together the Lily's chocolate bars, coconut oil and heavy whipping cream. Stir until smooth.

9) Dip each nut mix into the chocolate and coat fully. Line up on wax paper after dipping.

10) Move to refrigerator and allow to cool fully. 

11) Enjoy!
