Surprise Cupcakes

All night I'd been asking my dad what he wanted for dessert, and he wasn't giving me an answer. Finally, he said "surprise me," so a surprise is what I made - not only for him, but for me as well. I wasn't really sure if these were going to turn out to be brownies with a cookie inside or cupcakes with a cookie inside, but as it turned out, they are cupcakes with a cupcake inside. So there you go, a surprise - and a delicious surprise at that - all around! 

Ingredients:

Vanilla 
4 tbsp salted butter, softened
1/2 cup Swerve
2 egg yolks
1/4 cup almond flour
2 tbsp coconut flour
1/2 tsp vanilla
1 squeeze Whole Earth monk fruit juice concentrate
2 tsp French Vanilla protein powder
1 tbsp heavy whipping cream
1/4 cup Lily's chocolate chips

Chocolate
4 tbsp salted butter, melted
1 cup almond flour
1/4 cup unsweetened cocoa powder
1/3 cup powdered Swerve
1/3 cup unsweetened cashew milk
1 tbsp sour cream
1/3 cup 100% liquid egg whites
1 large egg
1/2 tsp vanilla
1/2 tsp baking powder

Instructions:

1) In a medium bowl, mix the 4 tbsp softened butter with the 1/2 cup Swerve.

2) Add the egg yolks, almond flour, coconut flour, vanilla, monk fruit, protein powder and heavy whipping cream. Stir well.

3) Mix the chocolate chips into the dough.

4) Roll the dough into small dough balls.

5) Place dough balls in freezer while preparing the chocolate batter.

6) Pre-heat oven to 350 degrees.

7) Mix together all of the chocolate ingredients and stir well. 

8) Put 24-mini cupcake liners in a 24-mini cupcake pan, or spray the pan very well with coconut oil.

9) Coat the bottom of each hole with chocolate batter (about 1/2 cm-1 cm deep). 

10) Remove the vanilla dough balls from the freezer and place a dough ball on top of the chocolate batter in each hole.

11) Use the remainder of the chocolate batter to fully cover each dough ball.

12) Place in the oven for about 17-20 minutes or until fully cooked.

13) Let the mini cupcakes cool in the pan for 5-10 minutes, and then let cool on a paper towel.
