Soft Rainbow "Sugar" Cookies

Taste is all that really matters in a cookie, but it sure is nice if they look fun too, right? And nothing is more fun than colorful cookies. These things are truly amazing right out of the oven. They're soft and positively delicious. I made mine on the bigger size because it's common sense that big cookies are more fun than the little ones. If you're feeding these to toddlers though, I bet you could get at least a couple dozen cookies out of this batch. Mmmmmm...

Ingredients:

Cookies:

8 tbsp salted butter, softened
1/2 cup Swerve
1 large egg
1/2 cup almond flour
1/4 cup coconut flour
1 tsp vanilla
1 tsp baking soda
1 tbsp NOW egg white protein powder
2 squeezes Whole Earth monk fruit juice concentrate
1 tbsp unsweetened vanilla almond milk

Sprinkles:

1/2 cup Swerve
Food coloring drops

Instructions:

1) Pre-heat oven to 350 degree.

2) Beat together Swerve and softened butter.

3) Add in all other cookie ingredients and mix well.

4) Prepare sprinkles by mixing Swerve with food coloring drops until the Swerve is fully coated. 

5) Roll small balls of dough in the sprinkles and place on parchment-covered cookie sheets.

6) Bake for about 15 minutes or until done.

7) Let cool for 5-10 minutes on the cookie sheet, and then let the cookies "set" on a paper towel.
