Low Carb Cocoa Puffs

My house smells like chocolatey goodness - yum! After my Low Carb Loops adventure a couple of weeks ago, I decided it was time for some Cocoa Puffs. One of my biggest struggles with the Low Carb Loops was the balance between getting them crunchy and ruining the pretty colors, but luckily since Cocoa Puffs are dark anyway, I was able to get these crunchy without ruining their appearance. In fact, I was pretty intrigued by how much they look like Cocoa Puffs! The carbs in this cereal are nearly entirely fiber, so even though I don't typically count net carbs, this cereal was an exception. As you can see, it makes about 1.5 cups, so 3/4 cup is 1 serving:


Ingredients:

2 tbsp ground chia seed
¼ cup powdered Swerve
2 tbsp golden flax seed meal
3 large egg whites
1 tbsp almond flour
1 tbsp coconut flour
1 tbsp egg white protein powder
1 tbsp solid coconut oil
1 tbsp unsweetened cocoa powder
½ tsp baking powder
2 squeezes Whole Earth monk fruit juice concentrate

Instructions:

1) Mix all ingredients together in a large bowl. The "dough" will be fairly thick.

2) Put the "dough" into an icing bag.

3) Cover 2 cookie sheets in parchment paper, and pipe Cocoa Puff-sized pieces onto the paper. (This step is somewhat time consuming and tedious, but for perfect looking Cocoa Puffs, it's worth it ;) ).

4) Pre-heat oven to 350. 

5) Cook Cocoa Puffs for about 12-15 minutes or until hard to the touch and crunchy (if you pop one in your mouth).
