Cinnamon Coconut Mug Cake

I wanted something sweet tonight, and I didn't want to take a lot of time or make something big, so I came up with a cinnamon coconut mug cake recipe. It satisfied my sweet craving, and I'm sure I'll be making this regularly, as cinnamon and coconut are two of my favorite flavors!

Ingredients:


2 tbsp unsweetened shredded coconut
3 tbsp liquid egg white
2 tbsp Swerve
1 tbsp NOW egg white protein powder
1 tbsp unsweetened almond milk
1/2 tsp cinnamon
¼ tsp baking powder
¼ tsp vanilla

Instructions:

1) Spray a large mug with coconut oil.

2) Mix together all ingredients very well.

3) Cook in the microwave for 30 seconds. Let it fall a little so it doesn't overflow, and then cook for about 30-45 seconds more.

4) Flip mug onto a plate. 

5) Optional: Sprinkle with cinnamon and coconut to make it look pretty, and enjoy!
