Low Carb Chocolate Chip Cookies

So I just arrived home today and was quick to get a batch of homemade chocolate chippers into the oven for my dad, who has stayed low carb since I was home last! These hit the spot! 

Ingredients:

8 oz cream cheese, softened
¾ cup almond flour
3 large egg whites
¼ cup NOW egg white protein powder
1/3 cup coconut flour
2 tsp vanilla
4 squeeze Whole Earth monk fruit juice concentrate
2/3 cup Swerve
1 tsp baking soda
2/3 cup Lily’s chocolate chips

Instructions:

1) Pre-heat oven to 350 degrees. 

2) Mix all ingredients together except the Lily's chocolate chips. Stir well.

3) Add the Lily's chocolate chips and mix evenly throughout the dough.

4) Spray a couple of cookie sheets with coconut oil spray.

5) Rough dough into small balls and flatten slightly with a spatula.

6) Bake for 12-15 minutes or until lightly brown.

7) Let cool on cookie sheet for about 10 minutes, and then transfer to a paper towel as they cool.
